Chowhound: CUT, A Steak Experience at The Palazzo Las Vegas

CUT Las Vegas is master chef Wolfgang Puck’s critically acclaimed, AAA Four Diamond Award-winning fine dining steak restaurant at The Palazzo Las Vegas. When you enter CUT Las Vegas, you'll immediately notice the fresh modern design that you don't find at many steakhouses. Las Vegas-based design firm ABA designed the 160-seat restaurant and 60-seat bar, providing a modern aesthetic to the traditional steakhouse.

CUT Las Vegas is not your traditional steakhouse at all by design or taste.  However, holds traditional values close while providing a modern touch to a wide variety of steaks, including USDA Prime Nebraska corn-fed, 35-day dry-aged steaks to Australian 100% Wagyu Beef.  You can also enjoy a wide array of non-steak dishes including the Kobe Beef Short Ribs and Colorado Lamb Chops with Cucumber-Mint Raita.

CUT Las Vegas is in line with some fine dining restaurants where steaks are mostly around $60 each and there are very few bottles of wine under $100.  If you are a person that likes steak sauces, there is a wide variety to chose from for a nominal fee on top of what you're already paying for your steak.  With that said, you get what you pay for and that's a wonderfully prepared steak and a great tasting piece of beef.  As I traditionally do, my last visit I had a NY strip (from Nebraska) prepared medium. The steak was cooked perfectly.  I'm not sure that the location of where my steak came from mattered much, but it was tasty and one of the better steaks I've had in Las Vegas.

While my initial reaction to CUT Las Vegas was one of sticker shock, I moved past that quickly and will always remember having an excellent steak.  Appetizers, salads and sides were at a minimum for me but the Tempura Onion Rings and Brussels Sprouts prepared with Smoky Bacon and Pearl Onions remain in memory as being very good.

Overall, the atmosphere and food at CUT Las Vegas were excellent and is one of the best dining options at The Palazzo. The only negative I found is the restaurant serves some of the most expensive steaks in Las Vegas and charges for steak sauce (even though I don't use sauce with my steak).  But with that said, CUT Las Vegas is a fine dining restaurant and the prices of the steaks and wine were not very out of line for the experience you will have.
