Chowhound: NOVE Italiano, Palms Casino Resort, Las Vegas
Easily one of my favorite restaurants in Las Vegas is NOVE Italiano and for multiple reasons, at the end of this post I hope I have you salivating and rushing out to dine there. Located on the 52nd floor of the Fantasy Tower at the Palms Casino Resort, a quick elevator ride brings you front and center to the magnificent views of the Las Vegas Strip, where the real fun begins. Chef Geno Bernardo may be one of Las Vegas’ most underrated Chefs as his food is dynamite and he’s also a huge part of the locavore movement with a large portion of produce coming from his and other local farms around town (his is located 30 miles west in Pahrump).
Starting off on the appetizer side, the can’t miss items include a selection of delectable thin crust pizzas, Federal Hill Calamari with a nice hint of spice from the addition of banana peppers, Grilled Octopus and my personal favorite, homemade Burrata. If pasta is what you are in the mood for, mama mia, you must try “My Grandmother’s Ravioli,” stuffed with short rib and topped with a brown butter sauce. On the entrée side, the Alaskan Halibut served with spaghetti squash, oven roasted tomatoes and a shellfish brodo is beautiful in presentation and never outdone in taste. The Veal Nove is another excellent choice, thin slices of the delicate meat served with prosciutto, arugula and lemon. If you are in the mood for a steak, hand seasoned prime cuts of beef are available for your dining pleasure. When it comes to dessert there is only one choice, the Chocolate Ganache sprinkled with sea salt that is melt in your mouth amazing.
After you’ve enjoyed a wonderful meal and relished the breathtaking views, saunter upstairs one level with direct access to the Playboy Club for an after dinner drink or to get the evening’s party started.
