Eating In Las Vegas: American Fish at Aria
The Experience
American Fish is really about the art of cooking fish. Imagine a single restaurant that will salt bake, wood grill, sea water poach and cast iron griddle your fish. Yes, they do it all and they do it very well. They'll also do it in a casual yet refined way. The restaurant feels like fine dining mixed in with a Northern California mountain side inn. Don’t be surprised if some guy walks out of the kitchen in fishing gear because the fish is so fresh there might a stream running through the back of Aria resort. The atmosphere is casual and if you are thinking of that great anniversary meal this is the spot.
Who You Are Taking To The Restaurant
My most memorable meal at American Fish was with a very good friend. We shared a few entrees and had a few drinks. We spent 3 hours eating and laughing. The reason why it works is the concept of the different preparation methods sparks the curiosity of the adventurous eater. My wife and I had a long meal there and our experience was more subdued. It was still very good and memorable but we shared a few moments when looking around the place while reminiscing about camping with our kids. I won’t lie, I shed a tear that night and started missing my boys. Food that evokes emotion is good. Michael Mina’s American Fish made me cry it was so good. What else can I say? Take your friends, take your spouse or eat at the bar alone.
What You’ll Order
You’ll have to make a tough decision right from the start and it will be painful. crab cake or lobster roll? They are both good and unless you are sitting with 4 people you have to be a grown up and just choose one. Crispy on the outside and soft on the inside or buttery and savory. That is what you must choose from. The snapper in a salt crust is what flavor profiles were created for. Don’t worry about the salt, worry about the addiction that comes from the combination of flavors and possibly how you’ll crave fennel after this. (I know, fennel? Yes, fennel). Go to the wood grilled side of the kitchen and you might be attracted to the Ahi Tuna, yes, it is divine but instead hope that the wreckfish is on the menu. This white fish stands up to the cooking method so it retains plenty of its texture and for me that means more surface area for flavor.
Make sure to have your server talk to you about the different cooking methods and see what the kitchen is excited about during your visit. Also, for the non-fish lovers they do a decent steak at American Fish.
