Light Group Opens First Off-Strip Restaurant: Hearthstone

Get ready for more deliciousness to hit the Vegas valley. Slated to open this fall, The Light Group is opening their first off-Strip restaurant with Hearthstone Kitchen & Cellar at Red Rock Casino. The venue's kitchen and menu will be headed up by The Light Group's own Brian Massie, executive chef and partner of Hearthstone, and will focus on rustic American dishes. What's more is that the kitchen will be equipped with wood-burning ovens and stoves, an increasingly popular inclusion in many fine dining restaurants as of late.

Hearthstone's food concepts are designed with sharing in mind (think "Americanized tapas"), and the menu will be refreshed constantly to include seasonal ingredients sourced from organic framers and purveyors of sustainable agriculture. Chalk one up for sustainable food.

“I’m excited to introduce a great Rustic American concept with a consistently evolving menu," said Massie. "I’ll be working hand-in-hand with organic farmers, ranchers, and fisherman who practice sustainable agriculture and share my passion for the craft."

The restaurant will also feature a substantial outdoor patio, perfect for large groups and some al fresco dining when the sun goes down over the Red Rock mountains. No word yet from Red Rock, The Light Group or Hearthstone on when the exact open date will be, but we'll keep you posted on Twitter if we hear anything.
