As we sit on elegant couches inside of the Delano’s new Franklin bar and lounge with dimly lit lighting and a soundtrack to match, Sarah Johnson orders a round of Timmermans Oude Gueuze for the table.

My question as to where to get sour beers in Vegas was met promptly with her ordering the Timmermans. The tart, sour beer satisfied my thirst as Johnson, a soft spoken and brilliant woman of 36-years-old, discussed her vision for broadening the beer landscape in Las Vegas.

In order to fully grasp all there is to offer inside Mandalay Bay Hotel & Casino, you'd likely need a solid week to peruse, sip, savor and explore all of their venues. Actually, I just did the math and it'd take a full month to just have a dinner at each restaurant inside this gargantuan hotel and casino. It’s another beer extravaganza weekend in Vegas and this time Mandalay Bay Hotel & Casino is hosting this BEER Weekend, which will be held September 12-14. This new BEER fest will have a full smattering of activities including a panel discussion on the craft beer revolution, a five-course meal paired with specific brews, a beer brunch and more.

For the second year in a row, Vegas will play host to the official King of Pop Birthday Party, which celebrates the life and legacy of Michael Jackson. The day-long event adds two extra performances of Cirque du Soleil’s Michael Jackson ONE show at Mandalay Bay on August 29 at both 7 p.m. and 9:30 p.m..

This hotel has long been atop my list of favorites because it has a certain level of classy, luxury and comfortable attributes. It’s not a super luxury resort although it has a tendency to feel that way. It’s also no longer the hippest spot on the Las Vegas strip although it can hold its own. It’s not cheap and it’s not necessarily convenient either. What it does well is keep you entertained, fed and very happy.

The Experience
This is the 24 hour hotel café that has been taken to another level. You’ll soon find out that regardless of what time you are having a meal you can probably expect more than your typical coffee shop menu. This is comfort food that is getting you to an even more comfortable level. Leave your dietary restrictions at home because you’ll walk in to Citizens for a convenient meal and walk out stuffed. The portions are ample and you’ll be surprised but what they are doing.

I know what you’re thinking: An aquarium in the desert? Sure, why not? You think the fish at the aquariums by the ocean just walked into their tanks off the beach? Of course not. So the idea of a world-class aquarium in the middle of the Mohave really shouldn’t seem so hard to swallow. Hey, this is Vegas, we make magic happen every darn day.
