Some things never get old. Like the ubiquitous love that people have for the Hard Rock Hotel & Casino Las Vegas eatery, Pink Taco.

Say what you will of the name, but it’s what’s inside that counts. And this place is all about the details. Rather than try and promise you “straight from Mexico” eats, Pink Taco delivers Mexican bites with Cali flare and that works just fine for Las Vegas visitors (and locals). Oh and keep in mind, some of the fare is yes, pink.

The spot is celebrated for their signature Pink Taco, a.k.a Panuchos, which is filled with nothing short of greatness-- black beans, grilled chicken, salsa arbol, pickled onions and avocado. Order it. If you’re not in the mood for tacos opt for the Chile Relleno.  And here’s a tip, if you’re anxious to eat, do yourself a favor and score the appetizer platter. Take your pick of carne asada skewers, chicken skewers, taquitos, sweet corn tamales and guac. Sounds delicious right?

And like any good south of the borders spot, Pink Taco boasts a healthy list of margaritas. Top choice? Pomegranate. It’ll run you about $12 and it definitely does double duty when it comes to getting your buzz on.

The decor here mirrors the food--fun, crafty and oftentimes eclectic, so there’s plenty to see while you wait for your food and devour the massive bowl of chips and salsa that’s before you.

Pink Taco opens for breakfast from 9 a.m. to noon Monday through Friday and 7 a.m. to noon Saturday and Sunday.  Happy Hour features two-for-one beer and house margaritas as well as half-off appetizers from 4 to 7 p.m. Monday through Friday.   Normal restaurant hours are 9 a.m. to 10 p.m. Monday through Thursday; 9 a.m. to 2 a.m. on Friday; 7 a.m. to 2 a.m. on Saturday; 7 a.m. to 10 p.m. on Sunday.
